When it comes down to it, Breathless Wines is a family affair, built by the love of three sisters, Sharon, Rebecca, and Cynthia, and the passion for life that their mother passed down to them.
The sisters, along with Breathless Winemaker Penny Gadd-Coster, are dedicated to sparkling winemaking in the traditional method, creating refreshing sparkling wines that pair well with life’s special moments. Breathless Sparkling Wines are hand-crafted from select Pinot Noir and Chardonnay grapes using the traditional French method, méthode champenoise, guided by the expert winemaking hand of Penny Gadd-Coster. Penny, recently named “Winemaker of the Year” by the North Bay Business Journal, is a renowned winemaker with 35 years of experience in sparkling winemaking.
The path to happiness and a sense of well-being resides in the simple act of savoring the little things, like a baby’s laugh; a loved-one’s smile; a fire softly burning; or warm bread, just out of the oven. Or even enjoying a glass of bubbles with a long-missed friend.
The woman on our label is a tribute to our Mother, Martha, and all the men and women who teach and remind us to take each breath we are given as a gift to be cherished.
A native of Texas, Robert “Buttercup” Nieto began his career as a line cook at the Corpus Christi Country Club after received his cooking and baking certificate from Del Mar Community College. Although he started as a line cook, Robert always had a thing for sweets. Robert then headed west to Las Vegas to work in 5-star hotels, such as: Bellagio, Paris Las Vegas and the Venetian as a Pastry Sous Chef. Robert finally got his break by landing a job as Pastry Sous Chef at world-renowned Chef Thomas Keller’s Bouchon Bistro. He was given the opportunity to move to Napa Valley as the Pastry Chef of Bouchon Bistro and Bouchon Bakery in Yountville. Robert then moved to Sonoma County to work at Michelin starred restaurant, Madrona Manor as the Pastry Chef in 2010 and as the Pastry Chef at Jackson Family Wines in 2012.
Over the course of his career, Robert has competed in a myriad of pastry competitions. In 2013, he was selected for tryouts by Bread Bakers Guild of America to compete in Viennoiserie and Artistic Design. In 2015, he competed at Pastry Live in the Chocolate Bonbons, Plated Dessert, and Championship Showpiece categories. That same year, he also had the privilege of being selected as a finalist for the Valrhona Chocolate Chef Competition (C3). In 2016, Dessert Professional Magazine selected Robert as one of the Top 10 Pastry Chefs in America. Robert was later selected as a member of Team USA for the Mondial des Arts Sucre international competition in February of 2018 in Paris, France. Robert and his team member came in 5th in the world in this intense and highly competitive competition. In December of 2019 Robert competed on and won the Food Network series, Holiday Wars. Robert is again on Pastry Team USA for the 2020 Mondial des Arts Sucre and will compete in October of 2020!
In early 2019, Robert realized his long time dream and launched his own chocolate company, Fleur Sauvage Chocolates (Fleur Sauvage means Wild Flower in French). Fleur Sauvage Chocolates makes custom chocolates for local wineries using seasonal ingredients. Fleur Sauvage Chocolates also sells at Sonoma County Farmers Markets, Festivals, and special events. On his days off, he spends much of his time experimenting with recipes, working on his business, and spending time with family and friends. He is also a bike and triathlon enthusiast. Robert is passionate about transforming ingredients into desserts and is adept at creating pairings with wine, beer, tea and coffee to find the ideal balance. Robert has an extreme love for chocolate! So much so that he has three chocolate themed tattoos!
This is the story of two friends, a baby blue Chevy van and a lifelong love affair with food. Sue Conley and Peggy Smith took a hippie trip to San Francisco in 1976 after finishing degrees at the University of Tennessee. Both established careers in some of San Francisco’s most famous kitchens: Peggy spending 17 years at Chez Panisse, and Sue co-owning Bette’s Oceanview Diner in Berkeley.
By the early 1990s, Peggy and Sue were ready for a new challenge. They found it in Pt. Reyes Station, a picturesque postage-stamp-of-a-town on the coast about an hour north of San Francisco. With their first-hand knowledge of the restaurant business, they launched Tomales Bay Foods, a marketing vehicle to help West Marin’s farms and dairies get their delicious products into the hands of the Bay Area’s finest chefs. Their first location, a renovated hay barn in downtown Point Reyes, featured a small cheesemaking room at the entrance to the building. It gave them ideas. Using milk from neighboring Straus Family Creamery, they began making delicious fresh cheeses.
Young & Yonder Spirits is an artisan craft distillery led by husband and wife team Joshua and Sarah Opatz.
The distillery is located in downtown Healdsburg, in the epicenter of world renown Sonoma County, California.
From grain to shelf, we belabor every detail for quality, and continually strive to innovate, trying out new, novel techniques, flavors and experimentations to create exceptional distilled products for all to enjoy.
We started the distillery out of our hobby and interest turned passion. We started learning about distilled spirits production while working in San Francisco, and decided after many years of debate to take the risk and pursue this entrepreneurial venture. We started the company in 2013 in a small warehouse space in Cloverdale, California, and then moved to a larger tasting room and production facility in Healdsburg in 2017.
We produce vodka, gin, bourbon, and absinthe, and are constantly experimenting with new ideas and products.
